Prep Time: 20 minutes (honestly!)
Cooking Time: 45 minutes (but you don't have to stand over it)
best served with croutons or homemade bread (or the expensive stuff)
Serves 4
What you will need...
rasher of bacon - trimmed and diced
1 large onion - diced
2 cups of leek
2 large potatoes (or 500g) peeled and sliced 1cm thick
2 large parsnips (or 500g) peeled and sliced 1 cm thick also
1 litre of vegetable stock (get the more expensive stuff)
1 can of no-added salt tomatoes (doesn't matter if diced or whole)
1 1/2 teaspoon of horopito seasoning
2 tablespoons of chopped parsley for garnish (optional)
Okay this is an easy one...but you need a heavy based pan!
cook bacon until fat is transparent, takes about 3 minutes on medium heat.
add in the onion and leek, cover and saute for 10 minutes, shaking pan every 2-3 mins
add the potatoes, parnsips, stock, horopito seasoning and tomatoes.
bring to a boil - on a medium-low heat until vegetables are tender (approx 20 mins)
that's it ... its ready to eat...
some people like to chuck it in a blender - if that is your thing.. go for it!
quick tip: if you double the ingredients - you can freeze the rest for when you are in a rush!
