Unlike some breakfast foods, chia seeds won’t spike your blood sugar or insulin levels.
I’ve also added cinnamon to the mix, a spice that’s known to help reduce blood sugar levels and even decrease your likelihood of developing heart disease. A combination of these two means you won’t have an energy slump like you would with coffee, and end up reaching for another coffee or chocolate bar from the vending machine.
Another reason to swap your coffee for chia seed pudding is that you'll also be upping your hydration levels! To make overnight oats, you need to combine it with a milk of your choice. This means you’re also getting the added benefit of hydration, calcium and proteins.
Okay, you get it, it’s pretty healthy but… how does it taste?
I’ve added raspberries and blueberries, two fruits that are loaded with polyphenols and antioxidants to help you burn fat and because well… they’re tasty. This breakfast is paleo-friendly, vegan-friendly, dairy-free and gluten-free. The only thing it's not free of is taste! It's a perfect balance of creamy, fruity and sweet.
