Quick and Easy - Tuna Salad
This is a simple but rewarding salad on those busy nights! or last minute bbq invites!
What you need to buy... (most things you'll already have in the cupboard)
1 Large brown onion (thinly sliced)
1 Large firm tomato quartered (beefsteak tomatoes are best) - or sundried tomatoes and capsicums if you feel like splashing out!
1 425g can of tuna in springwater
1 Large butter lettuce or 2 small ones (enough to cover the salad bowl)
1/2 cup of pitted olives (I prefer assorted)
1 tablespoon of capers - the smaller ones are best
1/4 cup of fresh parsley leaves (continental if available)
1/2 teaspoon of horopito seasoning
For the dressing
2 tablespoons of olive oil
Squirt of lemon juice (or juice of 2 small lemons if lucky enough to have a tree!)
1 teaspoon of balsamic vinegar
1 tablespoon of finely chopped parsley.
So how to make the perfect dish...
boil a pan of water - blanch the sliced onion in the water for ten seconds (be quick).
slice the tomato into wedges
drain the water from the tuna
arrange the lettuce on a serving platter or bowl
top with onion, tomato, tuna chunks, olives, capers with a sprinkle of horopito seasoning and finish with parsley.
To make the dressing
whisk the oil, lemon and vinegar in a small bowl. Stir in the chopped parsley. Either drizzle over the salad or put in a gravy boat and let the guests serve themselves.
Sit back and look like a pro.. grab a glass of wine and swan around the kitchen - careful to avoid the washing up!
