Beer Baked Potatoes - serve this little beauty at the next bbq and see how fast it disappears!
It'll take you about an hour all up, 30 mins prep and 30 minutes in the oven. Simples.
What you need to buy at the shops!
750g large desiree potatoes (try and get the clean/washed/scrubbed ones)
1 cup of Jarlsberg cheese (its worth it!)
1/2 teaspoon of paprika (if you don't have any - its worth buying it lasts forever)
1 large onion (sliced)
3 cloves or garlic (or buy one of those jars of minced garlic - if you do a bit of cooking)
1/2 a cup of beer - yes just half a cup.. you can drink the rest! (I always get mine from The Crafty Trout in Taupo).
1/4 teaspoon of caraway seeds (not essential)
3 teaspoons of PLAIN flour
1 cup of skimmed milk
1 tablespoon of dill (if you can't get it fresh - just leave it out)
1 teaspoon of horopito seasoning (yep that's my plug!)
So how is the magic done?
Preheat the oven to 180 degrees. coat a shallow baking dish with vegetable oil.
Get a large pan with just enough boiling water to cover the potatoes (boil for about 25 minutes on a medium heat) then drain - but whilst that is boiling away - cook the sauce !
Coat a heavy based frying pan with oil. Add garlic, onion for about 4-5 minutes then add the beer and caraway seeds. Bring to boil, then simmer on low heat for 2 minutes.
Separately blend in the flour and milk - then add milk mixture to the frying pan - along with dill and horopito seasoning.
Cook, until the sauce boils and thickens - then take off the heat.
Right back to the potatoes... drain the water.. slice them thinly into the baking tray. Pour half the milk mixture on top - covering the potatoes and then sprinkle half of the cheese then repeat (so you have 2 layers of potatoes and two layers of milk mixture with cheese on top!)
Top with paprika - (that you bought and wonder, when you are ever going to use it again - but you will)
Place in the oven at 180 degrees for about 30 minutes. You should be on your second beer by now and serve immediately.
